school's out




School's out for summer...
I'm a teacher, and for the last day of school I baked my kids shelves of vegan book cakes to inspire them to read for the summer. I used a whole grain chocolate cake. I had made frosting from scratch, but given my fatigue it was an ill fated venture from the start. I had to scrap the icing, and my husband (ever the level-headed lifesaver) went to the store for (unfortunately) way too sugary frosting. As it's been a long time since I've used store-bought frosting, the "books" turned out sloppy and not aesthetically pleasing to my obsessive compulsive side, but the kids loved them anyways.
I meant to start this blog at the beginning of the summer and just got caught up in other things. And so it begins...

That's adorable! I agree, store-bought frosting is waaaay too sweet. It just tastes artificial to me most of the time. Which is kind of funny considering that I used to eat it with a spoon.

I used to eat frosting wtih a spoon as well. Now, I really try to stay away from desserts that just taste like sugar!

I always use whole wheat pastry flour. I actually think it adds a lot to the depth of flavor in a dessert, and I don't miss white flour at all!

Love the many, many cakes. WOW! A vegan book cake for summer reading inspiration.... my own kids would gobble that one right up. :)
